Wonderful, where else will the buther talk to you. Today's meat depts. refuse to talk to you. They want as little contact w the cust as possible. My dad was a meat cutter 50 yrs easy never really retired but always loved talk to cust.

I'd encourage any adventurous home cook to do this. I did after watching Rob at Mado and it went beautifully.
