Howdy Partners! If you've got a hankerin' for a healthy, quick & easy chili... then this is for you! With just 5 inexpensive ingredients (4 if you leave out the meat), you'll have yourself some delicious food with plenty left over for another day!

This recipe is wheat & gluten free and can easily be adapted to be vegetarian by substituting the ground beef for tofu, edamame or nothing at all!

Since we rarely eat meat, I like to serve our chili over quinoa in a small soup cup with a large salad as the main course.

  • A great thickner is fat free refried beans! Just thought I should share this! :) I use it to thicken my chicken tortilla soup instead of cornstarch.

  • I thought your family was completely raw. I had no idea that you ate meat, particularly red meat. So, how often do you eat a cooked meal? Thanks for the recipe, Erika. And, I hope your family is doing well. There hasn't been an update on here about how everyone adapted after the adoption, but I assume all is going well.

  • @TheAppieShow Hi There! We have been well, but busy adjusting to life with 3 boys - especially with their special health & dietary needs. Generally we eat 50-60% raw food & whole food for the rest. We very rarely eat any meat products and only have 2 recipes with red meat in them & they always are served as a side dish. I personally do not care for meat, but my husband was raised on a cattle ranch, so we had to come to a 'meat compromise' every now and then. =) Thanks for checking in! God Bless!

  • @jeshrio Thanks for the G+ add =) I'm not entirely sure if Dennison's Chili is gluten free. I suspect the company would have more information about specific ingredients if you are allergic to gluten. However, this recipe is gluten free and fairly inexpensive to make - so hopefully you will enjoy it! Thanks for the comment! God Bless! ~ Erika
