It's so fucking annoying, over fifty people(men and women) want to marry me in Bowerstone so they all talk at me, watch me when I work, and follow me in my house! Is there a way to stop them from doing this because I'm at the point where I'm going to kill everyone in the game...

Actually I screwed this part up after the quest, I fast traveled away before I proposed to Lady Grey because I didn't have the cash on hand to purchase the cemetery mansion.
So yea if you leave the area without proposing to her she will be gone forever with no way of getting her back.
