Sandra Lee - Toasted Corn-Sweet Onion Salad

Originally aired as part of the "Restaurant Remakes - Bobby & Mario" episode on the Food Network, June 23rd, 2007.

Ingredients:

2 tablespoons vegetable oil, divided
2 cups frozen corn, thawed and patted dry
1 tablespoon lime juice
1/4 cup roasted tomato salsa
1/2 small red pepper, thinly sliced
1/4 cup sliced green onions, green only (about 3)
Salt and freshly ground black pepper

Directions:

In a medium saucepan over medium-high heat, add 1 tablespoon vegetable oil. When hot, add corn and cook, stirring infrequently until corn toasts and browns slightly on all sides.

In a large bowl, combine the lime juice, remaining 1 tablespoon vegetable oil, and the roasted tomato salsa. Add the toasted corn kernels, sliced red pepper, and the sliced green onion. Toss to coat with the dressing. Season, to taste, with salt and pepper.

Oh nice we're "toasting" a veg that was prev. frozen. Theres nothing wrong w frozen veg btw theyre just as good but you cant "toast" somerhing thats going to instantly steam lol...it will turn to mush then you add onions? Corn, Onions (2 sweet veg?) and add some salsa and shit? what would you eat this with the deceased body of your soccer player/flight buddy in the Andes Mountains after the crash? Fuck Sandra Lee but seriosuly, frozen veg for her is a HUGE step up from Canned shit/Boxes
