day 14

1/2 cup warm water
2 tsp active dry yeast
1 tsp sugar
let rest 10 minutes to "proof" your yeast
4 cups all purpose flour, or 5 cups bread flour (1 1/2 pounds)
2 tsp kosher salt or 3/4 tsp of table salt
1 Tbs olive oil
1 1/2 cups warm water

knead for about 8-10 minutes until smooth
Let rise 1-2 hours
form into balls
let rest until you need it, 1 hour or more
roll out, top and bake on 400 for 20 minutes or until brown on edges and slightly brown on bottom

  • I kneaded for 15 minutes, and it *still* isn't pretty like yours. :'o(

    What am I doing wrong? Should I be rougher w/ the dough??

    

  • @PrincessPetunia it could be to much flour when weather gets drier you can easily measure out even double the amount of flour without knowing it, sorry i didnt get back to you sooner, next time, add about 1 cup less flour, then slowly add until it feels soft and pliable

  • @CanadianPatriot1973 Could it be that the *opposite* is my problem? I mix it wet, and add flour til it's stiffer instead of the other way round.

    My arms are killing me today!!!

  • @PrincessPetunia stiffness is to much flour. :( poor arms, experiment. How did it turn out? the other thing is to let mix dough JUST until it looses its main stickiness, then let rest about 10-15 minutes, it lets the gluten rest, then knead. Let me know how it worked out for ya!

  • @CanadianPatriot1973 Honey, I just wanna tell you, when I find a good pizza chef I am totally loyal to them. These people are worth their weight in GOLD. There is a couple near where I do business a lot and they run this whacky pizza joint and they are so adorable, nice to the clients, they keep their place clean. Every eurocent I spend there, they deserve every frigging penny. They take a lotta care about the dough and ingredients and do nice salads and omelette sandwiches, I love 'em!

  • @CanadianPatriot1973 Yeah, I burn a candle in the room or sometimes use the oven. Thank you so much for this series, it is very friendly, you are using your personality, and it is really darn useful. I recommend PastryParrot1, she does a frugal chef series from Bolivia! Cooks such as myself are sometimes a tad scared of bakery issues. We just have to have some instruction, you know? Bless you.

  • @slobomotion that is why I keep my bread in the oven, we are drafty as well :( never fear baking pizza at to high of a heat, when I had the pizza shop we baked it at 500 degrees, but it cooks FAST, so watch out :)
