BEst french style omelettes i have seen are the japanse omelttes technique on youtube. They cook them on powerful stoves and they dont become overcooked.
@MisledTrick if u see the video of Gordon making the scrambled eggs, he doesnt whisk the eggs.. so the egs are not broken down anyways.. when Stuart makes the omelette he whisks the eggs which has already broken down the egg..
@MisledTrick I know which video you're referring to - there's a whole "controversy" about when to add the salt among chefs. Some say it breaks down the egg if you add too early, others say it doesn't make the slightest difference. Nobody agrees.
This recipe is kind of contradicting Chef Ramsay's recipe on Scrambled Eggs. Ramsay says DON'T add the salt until you serve it because the salt breaks down the eggs while it is cooking. I am assuming that it is different for omlettes?
...That's funny, because GORDON RAMSAY demonstrated omelettes with CHEESE on the F Word. He doesn't season the eggs until they're almost cooked either.
I personally love adding the cheese before cooking, and I fold it the omelet in half not like what he did, and with salt and pepper I like to add while cooking
@classicdinner i totaly agree however there are many pepole out there who dont have such equipment and would highly appriciat you showing them how to make an omlet with out using a non stick pan because its really dificult.
Nice job but Gordon doesn't like salt in raw eggs before cooking them.

Two things bug me:
first he added salt a little too early
second the heat was on high all the time, I thought he overcooked the eggs
