Thanks for all the great Gujarati recipes you've posted (in addition to all the others), especially this one as it might very well be my favourite. I wasn't overly familiar with the cuisine from the Western part of India at first but I'm amazed at how vegetarian-friendly Gujarati cuisine is. I'm not a vegetarian but I can be on some days at least because of recipes like this one (as well as handvo, dhokla, kadhi, etc). Keep up the great work!

Ah! The self-hating desis, probably ABCDs. So, we Indians overcook our greens and twigs and berries! And where is the science that says that it is BAD as you are trying to insinuate? Nutrition is not like a living thing that will die while cooking. Sometimes cooking helps in breaking 'thingies' into nutrients that our bodies can't. Self loathing folks make me caustic.

Sounds good. Thank you for sharing. Caraway seeds are also good with white cabbage. It gives it a nice nutty flavor.

@durgaaa : It is a leaf that is used in Indian cooking - it has a lot of flavor. You can get it at some of the Indian grocery stores. Fresh is best but off-season (winter), you can dry it and use it in cooking.
Contrary to the name, it is not what Curry Powder is made of.
