@MsLadyHo "A Little Taste of France" recommends a tablespoon of flour and 3/4 cup milk. It recommends frying the sandwich, but I understand that in France it is most properly prepared with broiling. I did so until the cheese on top was bubbly with brown spots, about 12 to 13 minutes.
