WOw, just found ya on here after doing a search on plantain puddin! So you just blend two plantains and bananas and thats it? I have two plantains rippening they dark yellow and almost black...I'm worried about letting it go too long? last time I think there was a bit of white mold on the outside skin so i opened it...is that typical, should i take the chance and wait it out longer? thanks again for the great recipe!

In Jamaica when the plantain is black all the way around it is definately RIPE and very very mushy!!!! Unless it has been treated with carbon as we would say- which is not good! We have the little ones in Jamaica too and yeah they do have an esp tarty taste.

Hi! Thank you for this great video. I have saved it to my favorites. I wasn't sure if plantains could be eaten raw. As for how to help them along in the ripening process, storing them in a brown paper sac works for me, but only for a few days, as they can become moldy if you leave them closed up too long. Thanks again!

@norxcontacts I wouldn't know what they taste like since I feed through a stomach tube. When I got them almost-ripe, they took a week or two to ripen; when green I think they took at least a month. I finally gave up and went back to bananas since the plantains were never ripe when I needed them.

@echoshadowlight I heard ripe raw plantains taste like banana marshmallows. How long did they take to ripen? I bought a half-ripe one at the store.

the perssimons your talking about are called Kakis. they are so deliciouse when completely rippened. They taste so sweet like a sorbet:)
My plantains are taking forever to ripen! And, someone just bought me a new batch from the store and they're completely GREEN - so I'm sure they'll take over a month to ripen... frustrating...

@echoshadowlight A good trick for faster ripening is to keep the plantains in a warm, humid place. During the winter, I keep mine upstairs in the bathroom.
You could also keep them outdoors in the sunshine. I do this in the Spring when mangoes are in season and they ripen much more quickly and properly. :)

I just made your plantain pudding recipe with the finely chopped celery, and it was absolutely divine! It's so creamy and decadent! This was the first time I've had plantains raw, but your video was very clear in explaining plaintain ripeness, so not only will my family be enjoying this yummy recipe on a regular basis, but a whole new fruit that we now know how to eat! @prettymama279 That's excellent, I'm so glad you enjoyed it! It's really nice sometimes to have a hearty, creamy fruit other than banana, mango, or papaya.

thanks for sharing. I didn't know that you could eat plantains raw..I used to cook them and my babysitter would fry them up..she was Dominican. I have that same blender Blendtec..it rocks right?
