How do you get collard greens not to be bitter? Do you have to boil it for a longer time?

Whenever I've managed to make this soup right as I feel sickness coming on, I've always stayed well! So good! I'm not as much a onion lover as Colleen so I usually substitute more potatoes or sometimes yellow bell pepper. It's also very hearty when made with veggie stock instead of the bouillon cube, though both are delicious. Thanks for another great recipe, Colleen!

I LOOVE all your recipes... You're the best vegan chef for sure :-) This soup, I changed some of the greens but I couldn't believe how good it was. I never thought i could use collard greens in a soup! I added some rice to it, for some extra texture, delicious and super healthy.. and i love how green it looks!! :) Perfect for St Patrick's Day .

This soup has gotten me over a couple of near illnesses and I never knew I could love kale before I made this dish. It's delicious!
