He was blind in GG and GGX to get Eddie. But Zato died after the events of GGX and Eddie took over the body till he find a new host body.

Baiken should have burst, esp. when eddie was going for far drill FRC unblockable. If you have burst, use it when possible, don't let it go to waste.

00:21 was an unblockable, shadow spitball is an overhead, the low made it a high/low within one frame of eachother, which is humanly very very hard to block. And the eddie could have thrown the burst if she decided to at the end.
