It's about the same really its easy to peel a potato with a peeler but it's messy it's sticky it's annoying, it's still hot after for you to mash or whatever pretty good idea no wonder factory's do this

You only leave it in the ice water for 10 seconds so the skin is cool enough to hold but it doesn't cool down the whole potato. :)
