this scene should of been left in because it makes it clear that orcs join the uruks at that point, in the normal film it is unclear why normal orcs are with the uruks when the rohirrim kill them. also uruk-hai are much better fighters and storger than normal orcs. thats why saruman uses them for fighting and the orcs he has as servents.
Actually Gandalf said in LotR that Saruman interbred orcs and goblin-men to create the Uruk-hai. However later in the movie Uruk-hai are shown to be created by a disgusting womb-like membrane deep beneath Isengard. I suppose you could say that Saruman used humans (probably kidnapped Rohirrim women) forcefully interbred with orcs, then put their offspring through an alchemical genetic engineering process to create the Uruk-hai.
