Belle's dislike of the quiet countryside makes sense when you consider that she was in "The Hunchback of Notre Dame." (the scene where Quasi is singing "Out There") She and her father probably left Paris because Frollo was going batshit insane and burning everything down to find Esmeralda. Sure it was dangerous, but it was exciting, and I can see how she'd miss it a little.
