I personally think that its a ego-busting strategy. A lot of the cooks have over estimated bearing of themselves so he treats them like shit to take them down a peg (like that guy leaning on the counter. You just dont do that especially a culinary expert). Its kinda like military training. LOL Culinary Bootcamp LOL

I know many people who have worked in kitchens before now, and they've said that in comparison to their Head Chef's, Ramsey is quite tame. Go figure that. :P

That is true reaper, my sister was a cook student and boy thos professors were nasty... more than this guy even.
They don't really do it to be mean and evil, they do it to galvanize you actually, and make you concentrate more... the do care about the student, even if it doesn't look like it, even Ramsey.
