Cooking Borek (feta and spinach filo pie) is so easy a three year old can make it (with a little help from one year old Elan, a wallaby and two bantum chickens).
You'll need: a pack of filo pastry, 8 eggs from happy chickens, 100ml oil of your choice, dried mint, a decent bunch of flat leaf parsley, 200-300g full fat feta, paprika (optional) and as Kaya says "lots of love".
Bake at 180 celsius for about 40 mins & serve with garlic, minted thick yoghurt and smile.
The steps look a little more complex than necessary. You can put all the cheese in one layer and the spinach in another. The more layers of filo you have, the fatter and more filling your borek will be :) The basic message is you can't go wrong.
