I highly doubt it would be Mitchell. And definitely not Halliwell.

Paige was very adament in the show that she would NOT be taking Henry's last not, not even as a hyphenation. So if she's anything like her sisters, she probably passed on her last name of Matthews to her kids, just like Piper and Phoebe kept their last names and passed them on to their children like their mother did with them.
