Trattori Cioppino, a new Italian restaurant served their first delectable meals May 31st. With views out to Green Lake, an open kitchen and a simple but casually elegant interior -- it was a lovely atmosphere in which to savor a beautifully prepared meal. Tender Crispy Calamari; refreshing House Salad; flavorful Spaghetti with Mixed Seafood; and a "words can't describe" petite round of Cheese Cake, resting on a puddle of dark cherry sauce -- it was sustenance for the gods.

Chef Ricardo Simeone's creativity touches everything that comes out of the kitchen -- he orchestrates all steps of food procurement and preparation. "I try to keep my hand all over the processes ... I cook slow food". The quality of ingredients, along with the end result, matter to him. Ricardo sources food locally - organic where possible - and imports ingredients from Italy.

Year after year, meal after meal, what keeps a hard-working chef going? Ricardo responds simply, "I like to create -- to make people happy". Reservation for one please!
