@chickenmanokout It means that it contains less minerals. Water in Europe, for example, tend to contain more impurities. Japan is renowned for its soft water which is safe to drink from the faucet without additional precaution. This is also why it is recommended to use such water in preparation of Japanese food lest it distorts the taste.

INCREDIBLE video. Loved it. I didn't care for some things shown but it made me want to fix it and eat it anyway! thanks for showing tempura. I love that stuff! now i know how to make it! keep these videos coming! i think this will also help J.E.T. programme participants try their hand at cooking japanese.

Be careful !!
When you cook Japanese foods, please use soft water !
The water hardness are different in each country.
Japan is soft water,and of course Japanese food culture has been developed under soft water.
Hard water kill the flavor of rice and Dashi ( kelp,bonito flakes,soy sauce,miso and so on ).
Especially almost European countries are using hard water mainly.
Please check the water hardness of your country before cooking.
