I think the reason for melting the chocolate and adding the shortening is so that the chocolate will be a little softer when you shave off the curls. Like, when you add some oil (never used shortening, but they are both fats so it should do the same basic thing) and let it set, the chocolate will never go back to being as hard as it was before you melted it. And it probably helps to keep the curls from breaking.

Remenber that the "small pieces" of chocolate used to be melt are bought in shops.
Instead of buying that chocolate, you can buy a chocolate bar and use it.
Unless that small chocolates are homemade from a chocolate bar (that's a loop). It's very difficult to have homemade chocolate unless you have a cocoa (or cacao) plantation
