Here's my version of homemade Peach Cobbler.

4 bags frozen peaches
1 stick butter
1/2 to 3/4 cup brown sugar
1/2 to 3/4 cup raw sugar
1 TBSP cinnamon
3 tsp nutmeg
2 tsp vanilla extract
2 TBSP all purpose flour
Two pie crust

In large dutch oven, heat peaches on medium heat for about 5 minutes. If possible, reserve about 1/4 cup of peach juice in glass measure. Add butter stick and stir occasionally until melted. Be careful not to over work peaches so they won't be mashed. Next, add both sugars and stir gently. Add spices and vanilla extract. Turn heat to simmer and cover to let spices and sugar incorporate for about 10 minutes.

With reserve peach juice, add about 1 TBSP flour or more, depending on how much liquid you have. This should form a nice paste about the consistency of thick pancake batter. Be sure to stir vigorously so that there are no lumps in flour. Add this mixture, 1 tablespoon at a time, to peach mixture. This is to thicken the peach mix so that it's not runny. Stir gently until incorporated. Remove from heat.

Prepare 9x13 baking pan with crust on the bottom of pan. Add peaches with slotted spoon until pan is full. Next, scoop remaining liquid onto of peaches. Be careful not to overflow pan. Make lattice design ontop of peaches. Sprinkle with 1 TBSP sugar and 1 tsp nutmeg. Place in 350 degree oven for about 30-40 minutes or until top is golden brown.

If you'd making your own pie crust here's a recipe you can use.

Flaky Pie Crust
2 cups all purpose flour
1 tsp salt
3/4 cup cold butter, cut in tablespoons
8 TBSP ice water

Place flour in large mixing bowl. Add salt and stir. Next add butter cut butter. Cut butter into flour mixture with pastry blender or use hands. Mix until flour butter mixture is crumbly. Add ice water into flour butter mix one tablespoon at a time. Use hands to mix dough and form into a ball. Cover with plastic wrap and refrigerate for 30 minutes.

  • how do you make the cobbler without eating the mixture all up before you even put it in the crust?! lol it looked so good I would've eaten it out the pot lol Good job!

  • @BeautifulHairByBrit LOL!!! Trust me, there have been plenty of times when the "extra peaches with juice" have mysteriously found themselves in a bowl with a mound of vanilla ice-cream *chuckle*
