Depending on electricity costs, this thing can cost you hundreds of dollars of year just to operate.
Assuming it's running 24 hours per day, that's 12 kwh per day. At an average electricity cost of 10 cents per kwh...thats $1.20 per day or $438 per year for only a few gallons of water per day.

500 watts?! Yes, it's less than a microwave but you don't run your microwave 24/7.
If you already use/need a dehumidifier, I think this is a great idea...but a terrible idea otherwise.

Cool idea, but one problem, this unit is set inside. Your turn on the AC and it's gonna get dry fast. Why not redesign this whole unit to run in conjunction with your AC unit, or have any outside dehumidifier? Much better idea.
