Unless that steel was diamond impregnated (and most viewer's will not be), it will not sharpen a knife, it will only hone it. Teaching people to scrape their knife against a steel like that is a waste of time and may damage the knife. A steel, unless it is made of a material harder than the knife like ceramic or diamond, is only used to hone, or straighten, a blade after it has been properly sharpened.

One thing I've never understood about that dice technique (cuts along 3 planes) - the onion is in horizontal layers already so why do you need the horizontal cuts?! Vertical slices then perpendicular horizontal slices gives you a good dice as is.

I did find it interesting how he did not cut through the back of the onion when dicing it. Will definitely try that tonight, I usually just cut right through and end up having to reposition the onion together while dicing.
