nice try but you are not making feta cheese. Feta cheese in not made with cow milk. It is made with 30% goat milk and 70% sheep milk, pytia (I think you call it renet and sea salt). Anything else is some other cheese but not feta cheese. I come from Greece and we are making feta cheese in my family our whole lives. If you are really interested in making feta cheese (and not danish cheese) I can happily write instructions to you to tell you how to do it.

@intheano thank you for the correction. In my area we don't have access to sheep milk, and have limited availability of goat milk. It seems it's a misnomer in the cheese making community. Most cheese making forums commonly describe the use of cow milk as a replacement for goat or sheep or both. The cheese making suppliers online even seem to have the ingredients listed incorrectly. I have no doubt you know how to make Feta cheese. Thank you again for the correction, and the acknowledgement.

I believe that stirring up and down refers to stirring up and down vertically, like you're stirring around the bowl, but on the opposite axis. It's just to make sure the milk at the top gets well incorporated into the milk at the bottom of the bowl. :)
