I remember trying a Siphon Filter at St. Ali, lovely, mild mouth feel, balanced acidity, and the tasting notes, chocolate, slight cherry, and subtle Darryl Braithwaite CD's. IN MY CAFE, I USE 15 MODIFIED BOILER LINKED SLAYERS JUST TO POUR 1 QUARTER HALF SINGLE QUARTER RISTRETTO. It takes a about 17 hours, at .00003 psi.
