You can do the same with cold ingredients by putting them in a "food" bowl, they need to sit in it longer to pick up the flavour but it's essentially the same technique resulting in a sort of pseudo-marinade as opposed to a pseudo-steep. >=]

Those dishes look so good and are so beautifully presented. =]
I find it odd though that the commentators call the pumpkin 'just a bowl' when in reality he was using the hot stew to realease a subtle amount of pumkin odour and flavour into the dish. That technique makes for extra depth of flavour without adding the ingredient directly to a dish so the taste/odour become more sunbdued.
