actually toro is the whole fatty belly part of the tuna, the best being the O-toro ( bottom half of the belly cut) and not as good but still premiun cut being the Chu-toro ( the belly part closest to the tail) , both cuts very appreciated and more expensive than regular Maguro meat.

@riceandseaweed I agree with you, it really is about taste. They say the best things are the worst for our health. Bacon, for example, is pretty much pure fat, even cooks in its own fatty oil. Delicious, but artery clogging. Same can be said about Toro - BUT - less damage to the arteries because fish contains Omega 3s which actually benefit the heart.

It depend on your taste pallet. but usually fat equals flavor. And it only take 5% of the whole fish(more scarce). (supply and demand). some people don't like it. So, like I said, it depends on YOU.
