well. speed means nothing at all if you cant maintain quality. but if that was just a speed drill then i guess its not all that bad. and by the way, the way i see it the goal should not be to simply give the customers what they like and are OK with but it should be to give them quality that far exceeds there expectations! thats not only a good why to get a good rep its also a good way to show the world just how good coffee can be. *$ has not a clue....

your vid is useless and misleading to people trying to learn how to pull proper espresso's. your title should be "how NOT to pull an espresso".

Sorry you feel that way. Though I wasn't exactly trying to show how to pull proper shots. I simply enjoy working out speed methods of doing repetitive tasks.
Also, even when pulling my shots like that, they usually come out pretty nice. I work in a mainstream coffee shop, so having AMAZINGLY RIDICULOUSLY GOOD shots isn't really a super high priority. They're fine with shots that are simply good.

I pull the correct amount of espresso, tamp it nice and tight, attach it to the group head, and start the shot. The coffee shop I work at is only mildly concerned with making amazing espresso, so I work with what I'm given.

That's terrible. There is no way that your coffee tastes good. There is going to be such a variation in temperature and shot times with the way you do it.
