Pea Soup
Empty a 1 lb. pkg of green or yellow split peas into a big bowl filled with 8 cups of water. Put a cover on it and set the bowl in the refrigerator to soak overnight.
Put the peas and water in a large crock pot. Add:
2-3 large carrots, peeled and diced
3 celery stalks, diced
1 cup frozen chopped onions
1 cup of chicken broth
3 TBS. dill
2 cloves of garlic
1 TBS. marjoram
2 TBS. olive oil
Stir ingredients to mix. Put the lid on the crock pot and set the temperature to med.-high. Let cook for approx. 5 hours (or once the ingredients have all mushed together) stirring occasionally. Dice sliced ham (or Canadian bacon) and add to pot. Add salt and pepper to taste. Wait 15 minutes and serve with a bread roll or crackers
