Yields: 4 servings
Ingredients:
1 (19oz.) frozen cheese tortellini
2 cups chicken, cooked and chopped
¼ cup sliced green olives
¼ cup sliced black olives
¼ cup red pepper, diced
2 tbsp. onion, chopped
2 tbsp. fresh parsley, chopped
2 tbsp. mayonnaise
1 tbsp. red wine vinegar
1 tsp. Italian seasoning
¼ cup olive oil
Salt and pepper to taste
Preparation Directions:
~ Cook tortellini according to pkg. directions; drain. Rinse with cold water and drain; stir in chicken. Add olives, red pepper, onion, and parsley, mix well.
~ Whisk together mayonnaise, vinegar, seasoning and olive oil. Pour over tortellini mixture and toss to coat. Add salt and pepper to taste.
~ Cover and chill about 30 minutes to blend flavors.
