@TheBrassHole Our grandparents canned their whole lives without these new regulations and never got sick. It's a bunch of government hype meant to intimidate people. Common sense should always override policy.

Going to try my whole family did it no additives. What the hell I may live longer after japan it made me think what would do in their place.

I'm just referring back to your video as this will be about the third season of using your instructions to can our home grown tomatoes. It is fantastic! Simple, easy to follow and clear. I also love your music. I like that you don't turn canning into something terrifying! Following your instructions I've canned many batches and had NO problems at all. Thanks again for this great video : )

Peace be onto you Bitterbetty thank you for sharing the information with all,but just a question? Is it not contaminating the tomatoes if your adding things like salt or handling them with your hands to put them in the jar OR covering the entire jar with water as to cross contaminate the jars through the impurity of the water? I have seen a few videos now and there seems to be allot of talk about using boiled utensils for all the handling and even a funnel.

like the video - but when boiling the jars after they are filled should you have the lid on the pot?

Tomatoes are a very Low Risk food for botulism which is the prime suspect for food poisoning with canned items. Botulism is killed by 10 minutes of boiling, 45 minutes of during processing plus, being made into sauce means another 35-40 minutes when I open the can.
The second reason is because I am concerned that 85 minutes of processing will destroy the flavor and texture.
I also have 3 years of canning with this method and 0 incidents of toxicity... As near as i can tell.

Okay Bitterbetty13, to give it a fair shake I watched the whole thing again and I actually like the music and it wasn't too loud, just right most the time. You have some good ideas that I will include the next time I can. For the person that says the Ball Guide says 85 minutes, which copy is that because mine says 45 minutes. I usually do 50 to be safe. And I do agree with the other poster, the graphics are a little too fast sometimes. But overall, this is a very good video for canning...

Thanks for the second viewing...
I also have a Ball guide that says 45 minutes ... but found 85 minutes referred to else where on the web on some pretty reputable sites...
I will keep doing mine for 45 minutes for reasons posted below.
As for the graphics... I am actually surpised you can make them out at all with this Loooow Res upload. And Next time I will try harder to make them longer and get a better resolution video uploaded.

Nice video but, had a hard time hearing her and the graphics were a bit difficult to read and went by too fast.

I had never made a video for upload befor this or an instructional video. With my software, this is a bad place to upload. Way too grainy...

I have ripped open the tomatoes and squished out the seeds with my thumbs before. But with these paste tomatoes, it worked fine to leave them in.
