this is restaurant cooking, the portions are large quantity. all the flavor will be intense. just look at the stock level. if u do this in home style flavor will be different coz the portion of ingredients are less.

3/4 cup soy sauce
3/4 cup mirin
4 tablespoons superfine sugar
