Today, I made scones for the first time, and I thought I had messed up on them because my dough wasn't as thick as yours, but they came out so awesome. I don't know what happened. Lol! But you have given me some good ideas for when I make scones again. :)

@kikilisek1 it makes the blending into the flour quicker without warming the butter too much.

i dont have buttermilk, is there something else i could use? or just regular milk?

Use an equal amount of milk (not skim), minus 1 Tbs. Stir in 1 Tbs of lemon juice (or white vinegar, or cider vinegar), and let it sit at room temp for 10 minutes. This is essentially making your own buttermilk. Have fun!

Bebevv--It's really not much butter at all! Since the recipe makes 8 scones, it's less than 1 tablespoon of butter per serving. Most bakery scones use twice as much butter and recipes you'll find in most cookbooks would call for about 10 tablespoons for the same amount of flour. So these are a healthier version of scones, but they don't taste "diety."
