how many wrestling moves are there and how do you get/use them?

From what I've heard, it's semi-random, based on the position you grab them opponent from and how much damage they've taken.

Is there a way to actually choose which wrestling move you perform? Or is it at random which grapples you'll use?

I'm not sure myself, I think maybe it was an upgrade given in exchange for the Lovikov(?) balls you find around the town.
