My take on "Old Homestead Steakhouse's" kobe beef hamburger, grilled on my Weber.

Ground Kobe Beef
Kosher salt (to taste)
Ground pepper (to taste)
Shitake mushrooms
Baby Bella mushrooms
Chipotle catsup
Champagne infused stone ground mustard
Horseradish sauce with ground black truffle
Green leaf lettuce

  • This looked really good. Although in my experience, Wagyu-only burgers can have a strange mushy texture due to their extremely high fat content. My favorite upscale burgers are made from aged beef, from cuts like short rib, chuck, flank, and rib-eye. Brioche buns are often cloying sweet for burgers, and it takes a skilled Chef to work with his baker to get the best bun possible. All that said, taste is a personal thing, so if it tastes good to you, then get it on!

  • @thePowerPlant Thanks for the info. These buns were focaccia, not brioche. I agree that brioche would be a tad on the sweet side.
