Gordon Ramsay talks a load of shit too. There's two videos of him cooking the "perfect steak" on youtube. On one, he says it's "absolutely essential" to turn it only once. On the other he says you should turn it every minute to cook it more evenly. He doesn't say either method is for preference, rather it is necessary to do it this way. But he does different things, yet he is doing it perfectly simply becuase it is him doing it. Bullshit.

This is more of a politeness towards other people thing rather than a taste of fine dining thing. Even if they think the food is mediocre, being in a nice restaurant with a date greatly reflects the type of response you're going to get.
