after you get the onions caramelized (they take about 1/2 hour, at low temperature) , put them aside. Take another pan, heat it, pour some oil in the pan and add salt. Fry the baby squids for a minute, just a few at a time. The pan must be really hot. When ready, mix with the onion and serve. The onion wll be tender, soft and slightly sweet and the squids kind of crunchy. MMM.. delicious
This one is a very popular Tapa here in Spain. Jose Andres makes an interesting variation of the original recipe. I've tried it and it's a lot tastier, the caramelized onion gives it a slighly sweet taste. Worth the effort
