和風炸豬排

詹姆士

食材:
豬里肌一塊、中筋麵粉一盤、蛋2顆、麵包粉一盤、蘿蔔泥1碗(沖水去嗆味)、醬油3大匙、味醂2大匙、清酒1大匙、檸檬汁1、蔥末1小碗

調味料:
胡椒、七味粉

做法
1. 豬里肌用肉槌拍扁後,表層灑鹽,再依序沾裹麵粉、蛋液、麵粉、蛋液、麵包粉後下鍋油炸撈起備用。

2.調醬:取一碗,倒入醬油、味醂、清酒、檸檬汁拌勻。

3.將炸好的豬排切成條狀後,盛入盤中,表層擺上蘿蔔泥灑上蔥末,最後淋醬汁,灑七味粉提味即可。


小叮嚀:
如何辨別油溫: 油溫160度;可以用筷子沾少許水測試,如果氣泡冒的速度越快,代表油溫越高。如果沒辦法判斷,可以去烹飪器材行買油溫計。

蘿蔔泥是將蘿蔔洗淨去皮後,以磨泥器或果汁機磨成泥。
蘿蔔泥1碗(沖水去嗆味),可以先用細篩濾網盛裝蘿蔔泥,再沖水就可以去除嗆味,但記得水量不要開太大。
