Awesome.

These are wonderful ideas! I was wondering if you wouldn't mind saying how the chicken should be kept in the fridge to avoid food contamination. This is one reason I worry about keeping chicken more than one day in the fridge. For example, I know not to reheat chicken more than once but any other food safety tips would be very helpful. Thanks!

Wonderful ideas! Chicken soft tacos, bbq chicken on toasted buns, and white chicken chili are some more ideas. If you can do all this with a chicken, imagine what you could do with a turkey! LOL!

good video but ya gotta work on the music volumn!!! blows your head off as you have to turn it up to hear you speak.

How can anyone prepare a roast chicken without seasoning it. Chicken as a whole in the western world is full of chemicals as they are reared naturally, so one needs extra seasoning to get some kind of chicken taste. I bet it tasted awful without any kind of seasoning...!!

I also wanted to thank you for not recommending the usual "eat more beans, rice and pasta".

Oh, and beans, rice & pasta are great meal, menu & budget stretchers, but there is more to it than that! Feel free to stop by my blog for more ideas, or to find my comment form-I'd be happy to answer more specific questions on Frugal Upstate as a "Reader's Question" segment. Good luck with stretching your food & budget!

Thank you for sharing this video. Please pardon my ignorance, but how did you roast the chicken? What spices did you use? And did you butter the skin, etc.
We are a small family of 3 and you inspire me to do a better job of stretching our food. Thanks again!

I'm so glad you enjoyed the video!
Honestly, when I roast a chicken I do it the dead simple no frills way-I just throw it in a pan and roast it without any additional seasoning, butter or anything. If I were going to go a bit "fancy" I might think to throw on some premade "poultry seasoning", sage (which is the main component of poultry seasoning), cajun spice or lemon pepper. But I don't usually remember to :)

I was just thinking....this kind of thing used to be what every Mom used to know.(I mean how to use leftovers creatively. And how to save electricity by roasting enough for a couple meals.
But now most people don't have that knowledge & skill anymore.
Really sad, considering the economy.
I think your videos must be helping a lot of people make ends meet. Thanks for sharing this video.

Thank you for your kind comment! It's always so nice to hear that folks find my videos and posts useful'.
You are so right-these types of skills used to be just general knowledge-but it all seems to have skipped a generation somehow. Blame the 80's :) I really do hope that folks who can most use this knowledge are finding it. . .
