Overall good job....however, please grill the meat fat side up. That lets the juices flow down over the meat as it renders and it helps on flair ups in the grill. as far as thawing in beer.... to each there own. if you have to ask a butcher for tri-tip ask for the "back fat" some will trim it completely off! I prefer to leave the fat on after cooking and serve with it, if you don't you can trim it off after the grill before cutting. also to serve..santa maria style is served with salsa.

I have found that 1 beer,1 cup soy sauce and 7 cloves of garlic make for a bomb ass marinade, may have to try it with the worcestershire sauce though next time.

I have heard of people using the Soy Sauce to marinade lotsa meats. It is a good idea! It will draw lots of flavor and moisture into the meat. I should give it a try! Thanks for watching!
