I think you meant "Braised" not "brazed"

brazed: To make of or decorate with brass.

braised: To cook (meat or vegetables) by browning in fat, then simmering in a small quantity of liquid in a covered container.

Bacteria is EVERYWHERE. Even on gloves. So washing your hands properly really isn't much different than wearing gloves. I'm assuming you don't watch cooking shows. They don't wear gloves on those either.

Gloves are a waste because you'd have to keep switching them if you're working with meat, fish, etc because of cross-contamination. So to spare the environment, most chefs don't wear gloves and instead just wash often & thoroughly.

The restaurant wasn't open yet so he probably does take off the bracelet, etc. We just kinda were filming when he first got to the restaurant to start prepping for dinner.

It was delicious :) We the eggplant next to it was even better, lol, but not as healthy as it was flash fried.
