I tried this out tonight. It was amazing! I used mint instead of dill and skipped the cumin powder... but I think I really out did you Chef ;) by searing the fish on a skillet before I put it in the oven. Great crispy coating and soft flesh!

@amrita0286 When u live abroad as a foreigner AND u have adventurous taste buds, u will find that u don't want to be associated with the other pussy foreigners (the fresh off the boat ones). There are really 2 types of foreigners here. Those who adapt and are no longer foreigners and the truly fussy foreigners (like indians, whereever they go).

3:54 yeah, fresh off the boat foreigners can be cry babies.. no taste adventure with them and they miss mama's cooking for years, years... before they are properly rooted in a country and start trying new cuisines.

Chef, can I use a fillet of, say, Salmon by rubbing the marinade on it instead of using a whole fish? I understand that obviously the fish will not be "closed" as in your recipe.
If I ccan, will the marinade become too dry?
