Michael earned his Associate of Arts degree in Liberal Arts from Mesa College and was a student in the Hospitality program. In addition, he holds several certificates from the American Hotel and Lodging Educational Institute, the certifying agency in the Hospitality industry. Since 2001, Michael has been an adjunct instructor in the Culinary Arts/Culinary Management and Hotel Management programs here at Mesa College. He uses computer technology extensively and incorporates it into his teaching in a variety of ways. He has experience with curriculum development and has developed his own instructional materials.
Mr. Fitzgerald has worked extensively in restaurant, hotel, bar and casino operations and has logged more than 20,000 hours as an on-site culinary consultant. In 1999 he was named Entrepreneur of the Year (Hospitality Consulting) in Acción San Diego, and, in 2005 Michael set up his own consulting company specializing in information technology. He has worked in companies such as Emerils Restaurants, the California Café, and he was the general manager of the French Gourmet Corporation, one of the largest high-end catering companies in San Diego. During the 2005 regular Major League Baseball season he took a position with the Delaware North Corporation, the culinary operators for the Padres-Petco Park and the Old Town Historic Park. In addition to the baseball concessions, the company also provided food service for concerts such as the Rolling Stones, where 6,000 prepared meals were served and food service was provided for more than 1,000 people per hour.
