@BabyK18316 Mochi is mainly using glutinous rice flour, Kudzu Mochi is to differentiate from normal Mochi by using Kudzu flour. You can use sweet potato flour beside potat flour for Mochi. Some Mochi have other kind of flour mixed in like cornstarch, tapioca flour, sweet potato flour to have a better jell like texture.
The Japanese way of making Mochi is pounding of steamed whole rice instead of instant Mochi by using hot boiling water pouring into flours and voila you got Mochi.

@BabyK18316 normal rice flour is made from uncooked plain rice, whereas, sweet rice flour(glutinous rice flour) is made from glutinous rice which is not sweet at all, but has a nice aroma when soaked in water or steamed. Anyway, glutinous rice is mainly for making sweet stuff like eating with mango, egg custards, coconut floss etc. Asian rice dumpling(wrapped with bamboo leaves) is made from glutinous rice regardless is sweet or salty type of dumpling with bean paste or meat as filling.
