@maxtormaxtor wow! i actually tested this at my mom's restaurant (she cooks them the way you described as the right way) and i cooked them the j.g. melon way and the 'right' way, and the melon burger was very soggy on the bottom with a tough cold top bun, the other burger was PERFECT! thanks!

The burger is cooked the wrong way and assembled in the wrong order. The bottom bun will be mashed thin with heat and moisture and the top bun dry and cold.
The correct way to cook the burger is to toast the bun on the same grill as the meat. When the bun is done you flip the burger and place the top bun on the patty while still cooking. Remove the bottom bun to the side and dress as desired.
When the patty is done the top bun will be 150 degrees and shiny. Place on dressed bottom bun.
