@chang248 You never drink the first steeping, since the leaves haven't yet opened up to reveal their full potential. You also need to heat the cups, since the flavor of the tea will change if it hits a cold cup. The first steeping is more of a "primer" for the leaves and the cups, so that you get the most out of the tea drinking experience.

The key of brewing good Oolong Yancha tea is the high temperature.
Pre heat the cups and use plenty of water...

very interesting techniques. I am so used to never washing the tea, and letting it brew for a least 1 minute. Once I get some nice oolong, I will try this.

I suggest wash all the fermented tea, It wash away the taste and smell that not belong to the tea leafs itself.. The taste is purer that way...
