I often use india ink as a background for contrast. With India ink, you can use a very fine point to go around the subject, then use a large brush to do the rest of it with no tide marks. Since black and white are complementary, a light subject like your flowers jump out at you. Since India ink does not run, you could do it first then add the watercolor as you did in the video with no chance of running of the ink into the watercolor. This make it ink and watercolor of course.
