  • I'm a little confused. You said 1/4 cup of cure. according to everything I read I need 1 Tsp. per 5# of meat . You have put enough pink cure in the brine to cure 60# of meat. Does your recipe call for more because your making a brine? Thanks.

  • My Favorite thing to make with tasso is gravy. Fried green tomatoes over cheese grits, covered with tasso gravy! Yum. Awesome videos man. You got me in the charcuterie mood!
