  • Actually I was referring to the cayenne pepper that you were recommending for the seasoning in this recipe. I think that it may be little too hot for my mother to handle after having radiation treatment for cancer. Sorry for being a "pain" but I have to be careful serving her certain types of foods. That's why I was wondering about a possible substitute seasoning that will be equally as delicious. Is there any other seasoning that you can suggest? Thanks a lot!

    Ah! Sorry for the confusion there. A good mild replacement for Cayenne is paprika. It brings out some flavor without heating the dish up.

    Use smoked Hungarian paprika for a little more flavor.

  • Can you suggest something other than hot pepper in this recipe as a delicious substitute? My mother is a throat cancer survivor and the radiation treatment has left her with a very sensitive mouth and throat that reacts to hot spices. I don't want to hurt her so can you help me out with this? I love your vids...so keep up the good work!

    The peppers used in this video are not hot peppers, but mild yellow and orange bell peppers. They have a lot of great flavor, but none of the heat. Hope this helps!

    I love the way you present your vids. I would like to know what camera and recording/editing system you use. The way you show the work area and not bounce allover the place is perfect. Do you record voice at the time you make the dish or dub it in later?

    So many questions and so little time.

    I look forward to hearing from you or send me to someone else that I can ask questions to?

  • @TheCheffEddie Thanks for the great compliments! These videos are all done in a very simplistic fashion with a Flip camera and the editing software that goes with it. I have someone with me in the kitchen that does the recording. We set up how each shot will start and finish and then shoot it all at once. No dubbing, no editing. It takes a little practice, but it's fairly easy once you get the hang of it. If you have any more questions, feel free to ask!
