I don't have access to your friend's seasoning so I use Tony's...you know the one...how do you think it compares? Milder, spicer or just totally different? Thanks

Well if it means anything to ya, I'll be cookin' barefooted tomorrow, myself! I don't even own a pair of shoes! lol. Just my work boots and dress boots. I HATE footwear.

@toddrodrigue Oh ok! Well i'm cookin a sausage and pork jambalaya tomorrow in my 12 qt. pot. Got me a new Bayou Classic burner today (model KAB6) and gotta break it in!! lol. I love cookin and eatin jambalaya. It's my favorite food.
We eat Jambalaya about twice a week here, but definately once a week. My daddy won a contest a couple years ago in French Settlement...

Great videos!! That pot come from St. Amant, LA (Krazy Kajun)? Are you in Livingston Parish (Walker Wildcats)? I cook similar to the way you do.
Tony's has a lot more salt then my friends mix. Since this video was made I have started seasoning it a little different. I will use 1/2 of an 8oz bottle of Season All on the 5lbs of pork meat. When it comes time to adjust the final seasoning after I add the broth, the seasoning is normally just right and requires only a very little salt adjustment. I am not a fan of Tony's

I've never heard of mushrooms in jambalaya, but that sounds like a delicious idea! Your jambalaya looks great so far!

Thanks for the compliment. I have been thinking about redoing it so it does not look like I cook barefooted all the time.
